  • Velocity announces ₹200 Cr fund to fuel the growth of restaurants and cloud kitchens selling on food aggregator platforms
  • Velocity aims to empower F&B brands by providing fast, scalable, and flexible financing solutions tailored to their growth needs.
Velocity, India’s leading cash-flow based financing platform, has earmarked 200 Cr in 2025 to support and accelerate growth in the restaurant and cloud kitchen ecosystem across India.

The fund is specifically designed to address the unique challenges faced by F&B brands and help them grow. F&B brands often struggle to secure financing from traditional sources like banks and NBFCs. India’s food delivery and dining-out market is projected to nearly double, growing from ₹5.5 trillion to ₹9 trillion by 2030, according to a report by Swiggy and Bain & Company. This surge is driven by rising disposable incomes, evolving consumer preferences, and the expanding reach of food aggregator platforms. Velocity’s fund is perfectly aligned with this growth and has placed a strong focus on empowering new-age restaurants and cloud kitchen brands, particularly those operating via food aggregator platforms like Zomato and Swiggy.

Commenting on the fund launch, Atul Khichariya, Co-Founder and COO, Velocity said, “The growing appetite of Indian consumers for diverse culinary experiences, combined with the convenience of online food delivery, is driving remarkable growth in the F&B sector. This shift is also fueling a premiumization trend, as consumers increasingly seek high-quality food and beverage options, reflecting their willingness to spend and indulge in unique dining experiences. Velocity’s cash-flow based financing model ensures that F&B brands can scale seamlessly while maintaining financial flexibility.

Since 2020, Velocity has funded several notable F&B brands such as IDC Kitchen, Smoor, Daily Sushi, Brahma Brew Works, Milano Ice cream, Imperio, Amore Gelato, Jamie's Pizza, and Babas Chicken. These businesses utilized the funds to expand operations, strengthen supply chains, and enhance marketing efforts.

Elaborating on Velocity’s role in shaping IDC Kitchen’s growth story, Abhishek Manikchand Baldota, Director - IDC Kitchen, said, “ Velocity has been instrumental in the growth of our business and has become an invaluable partner in our journey to success. The beauty of Velocity's financing lies in its true sense of partnership. We felt like we had gained a financial partner genuinely invested in our success. With Velocity's support, we have been able to accelerate our expansion plans, invest in inventory, and scale our marketing efforts”

Minseong Seok, Founder of Daily Sushi, added “The partnership with Velocity went beyond providing funds. They ensured independence and transparency through the right integration of technology and support from a dedicated team.”

India’s F&B industry is undergoing a rapid transformation driven by the convergence of quick commerce, cloud kitchens, and ultra-fast delivery models. Platforms like Zepto, Swiggy Instamart, and Blinkit have introduced 10-minute delivery services such as Zepto Cafe, Bolt, and Bistro. Bigbasket and Magicpin are also preparing to enter this space, while emerging players like Swish and Zing are also gaining traction. This shift to ultra-fast delivery is redefining convenience for consumers, pushing F&B brands to adapt swiftly. Moreover, initiatives like the Open Network for Digital Commerce (ONDC) are enabling F&B brands to extend their reach beyond traditional marketplaces, unlocking new revenue streams in India’s evolving food delivery ecosystem.

To stay competitive, F&B brands are embracing technologies to better understand consumer behavior, standardize processes and are investing in automation and machinery. As India’s F&B sector evolves rapidly, Velocity’s ₹200 crore fund is designed to support new-age innovators in the space. By offering fast, scalable, and flexible financing solutions, Velocity enables F&B brands to seize emerging market opportunities, scale operations, and meet increasing consumer demand.

Targeting Tier-1 and Tier-2 cities, the first phase of launch will see 35 outlets go-live across 15 cities, including Pune, Ahmedabad, Delhi NCR, Hyderabad, Surat and Indore

Bigspoon, a leading Cloud Kitchen start-up, in association with its celebrity investor, Mouni Roy today launched a neo-pizza brand, The Pizza People going live in 15 cities across 35 outlets. The Pizza People is India’s largest Pizza brand launch in a single day as Bigspoon leverages its extensive cloud kitchen network across Tier-1 and Tier-2 cities. The first phase of launch sees 35 outlets go-live across 15 cities, including Pune, Ahmedabad, Delhi NCR, Hyderabad, Surat and Indore.

Pizza People

The Pizza People is the first-of-its-kind Neapolitan Pizza chain at scale, exclusively available for deliveries only. It brings in premium cheese and imported toppings, on a Neapolitan-styled pizza base made from Australian wheat, clubbed with vented packaging boxes to retain temperature and moisture through its journey of delivery to the customer.

The current market gap of serving premium and hot pizzas across all major cities of India, at a competitive pricing, was identified, to build The Pizza People.

Kapil Mathrani, Bigspoon CEO and Co-Founder said, “We are excited to announce the launch of our bespoke Pizza brand, The Pizza People with Mouni. Her hands-on approach in brand building and her massive popularity adds immense value to Bigspoon.”

Despite the size of the market, premium pizzas have been an underserved category in the delivery market of India, due to a lack of standardization of food, lack of attention to packaging, and most large brands being franchisee-led. Bigspoon operates only company-owned outlets to maintain the highest degree of quality and processes. We would be doubling our outlet count in the next couple of months, to bring the finest pizzas across the country, and also launch internationally in the next quarter.”, He added.

Celebrity and Investor, Mouni Roy said, “I have always been a huge foodie and I am thrilled to be able to share my love for it with everyone. The Pizza People is dedicated to providing customers with the highest quality pizzas with the freshest ingredients. I can't wait for everyone to try our delicious pizzas and be a part of the TPP family.”

Pizza is one of the largest food categories in the delivery space, and with its second phase of a launch coming up in March, The Pizza People would be available across 50+ outlets in 25 cities. Bigspoon recently raised its Series-A equity funding, in a round of INR 100 Cr, from IAN, NB VC, Go Ventures, and Anicut.

According to a report, India’s cloud kitchen market is projected to touch a $2.5 Bn mark by 2028, growing at a CAGR of 17.5% during 2024-2028. The market is anticipated to grow on the grounds of the increasing inclination of the population toward online food delivery services

Best 5 Cloud Kitchens in Delhi-NCR That Are Using Eco-Friendly Food Packaging

From a waste management perspective, high-barrier, multi-layer, biodegradable food packaging could be a useful replacement for current multi-layered packaging that is non-recyclable and non-degradable. Unfortunately, most food packaging that is made from plastic, is typically thrown away rather than reused, recycled or compost.

While take-away has become a dynamic source of revenue for many restaurants, owners of cloud kitchens believe that setting up such kitchens has proven to be beneficial as many people have been looking for decent quality, healthy, and home-cooked meals during the pandemic, from using biodegradable and recyclable packaging to sourcing local ingredients. Many small businesses begin by making their packaging eco-friendly as a first step toward making a food brand sustainable.

In the food delivery business, packaging serves the essential function of preserving food quality, preventing product spilling or leaking, and communicating the brand messaging to customers. The growing demand for delivery-only services ultimately means more orders, which can exercise pressure on ghost kitchens to deliver a premium experience, despite negligible interaction with customers. The unique selling point of any cloud kitchen is food delivery to the customer’s doorstep. An important element in food delivery is the packaging. The resources, design, superiority of packaging, and how it is handled play a vital role in communicating your brand values to customers.

A 2020 report said that consumers overlook the environmental impact of food packaging. The report even challenged eaters who have sustainability on their minds to think beyond just the food they consume each day.

Let's take a look at the best five food delivery brands that are offering a restaurant experience to consumers by providing them with sustainable food packaging.

The Chhaunk

Mrs. Manjari Singh and Mrs. Hiranyamayi Shivani founded a cloud kitchen start-up in Gurgaon. The Chhaunk, which gives only Bihari food to all homemade food enthusiasts, such as Champaran meat mutton, litti chokha, Sattu ka sharbat, Bihari chicken curry, Sattu kachori, and methi puri, among others.

Some of their food offerings include freshly cooked Dum Biryani, kebabs, and phirni. Growing Cloud Kitchen Opportunity and its Challenges - Insights By Homefoodi

Homefoodi’s Business Model has been resilient to COVID-19 impact, exponentially aided a strong business continuity during the Lockdown period and the period post Lockdown

Most research and consulting reports on India’s Cloud Kitchen Market Size expects it to be about USD 1 Billion by 2023. The Cloud Kitchen market is increasingly becoming a significant part of the overall food delivery market. The recent Coronavirus pandemic is likely to have altered some of these numbers, but there is no stopping this obvious phenomenon of Cloud Kitchens.

The recent pandemic is likely to keep people away from dine-in restaurants and further cement the Cloud Kitchen Market not just in India but Globally. The below 2 reasons

Given the pandemic around, most people have become very cautious about health and hygiene; this strong change in consumer behavior has made Homefoodi, a Home food delivery app that aggregates Home Cloud kitchens to grow by over 50% during the lockdown as compared to Pre-Covid levels. With an ever-increasing demand of Home-cooked meals, Homefoodi provides the consumers with an array of 1000+ Dishes from over 250 Home Chefs for Breakfast, Lunch, Snacks and Dinner. Homefoodi is about everything that can be cooked and baked at home and hence the options are limitless.

Homefoodi being a renowned Home cloud kitchen aggregator has been growing since its launch in October 2019. Every month has been a growth story and they have been exceeding their defined business goals as well.

Commercial Cloud Kitchens face the following 3 Key Challenges.

  1. Dependence on Food Aggregators for Orders
  2. Inventory Management for orders and wastage
  3. Hygiene and Food Quality Standards

Only once the above challenges are resolved, can a Commercial cloud kitchen have a successful and inspiring story to share. Here's a wider look into the challenges:

Dependence on Food Aggregators for Orders: For a cloud kitchen to shoot up with flying colours they depend majorly on food aggregators, which in turn provide a platform to them. However, one must review each aggregator before going on-board with the said aggregator.

Inventory Management for orders and wastage: A management of orders and wastage is of utmost priority without one a cloud kitchen can easily end up having more to give-up than to achieve. An appropriate management maintains the logistics that helps create a win-win situation for both the Food aggregator as well as the cloud kitchen.

Hygiene and Food Quality Standards: A challenge of utmost priority that needs to curbed and looked after at any cost. No consumer has been or will be ever attracted to food or a cloud kitchen that neglects hygiene and food quality standards.

Home Cloud Kitchens score over Commercial Kitchens as far as the above challenges are concerned. The concept of Home Cloud Kitchens is fast evolving as the next frontier in Cloud Kitchen market. However, to leverage the Home Cloud Kitchen opportunity, one has to partner with a Trusted and successful Home Food Delivery APP.

For a Home Cloud Kitchen Food Delivery application to be successful the following demands must be met:

  1. Supply ecosystem of Talented Home Chefs.
  2. Simple Platform uniquely built for Home Chefs.
  3. Adequate Demand generation.

The Supply Ecosystem of a home-food aggregator must be able to identify talented home chefs and convince them to collaborate which can be only solved by an expert Front-End team and a robust selection process that involves food tasting and checks for cleanliness and hygiene. The Technology Platform should be user friendly for Home Chefs to address limitations and allow customization that suits their working and cooking style. Cloud Kitchen and Restaurant Technology Platform POSist to Empower Businesses with Digital Ordering and Industry-first Digital Postpaid Dining Experience

POSist, a leading cloud-based restaurant technology platform serving over 8,000 restaurants in 20 countries, today announced the release of its new technology stack. It features Digital Ordering and Industry-First Digital Postpaid Dining to help accelerate technology adoption in restaurants. The technology stack will assist restaurateurs to minimize physical interactions between patrons and the servers in a dine-in setup. The company has also announced a COVID-19 Waiver Package for the official period of the lockdown and an additional extension of product subscription for the equivalent number of days to its customers.

A COVID-19 Waiver To Support The Community

[caption id="attachment_146099" align="alignleft" width="369"] Ashish Tulsian, Co-founder and CEO, POSist Technologies[/caption]

"At POSist we truly believe in keeping our restaurant community at the core of everything we do. We understand the next three months will be very crucial for restaurant owners and would require them to operate with minimum CAPEX. As a technology partner, we strive to support our community in the best of our capacity. To do our bit, we are waiving the product subscription fee for 75 days with effect from March 15, 2020, to May 31, 2020. This waiver will be in the form of a direct discount. Additionally, we will be offering an extension of the software license for the same duration of days to the customers who have already purchased our product by paying upfront for the full year," said Ashish Tulsian, Co-founder and CEO, POSist Technologies.

Commenting on the product release, Ashish added, "When we started working on the tech stack, we took into account the feedback received from our customers across regions. From the collective feedback, it was evident that the restaurant industry cannot be contactless, however, by using technology interventions at the right touchpoint, we can at least put 'less contact' in practice. That became the core essence of what we are releasing today as our technology suite for the new normal."

POSist QR Code Reader

[caption id="attachment_146100" align="aligncenter" width="701"] Digital Ordering Using QR Code[/caption]

Using POSists dashboard, restaurants will have an option to generate QR code assigned to a particular table number. This QR code will be on display, on the respective table, where the guest will be seated. Once the guest is ready to order, all they have to do is scan the QR code, enter their mobile number and the menu will appear on their mobile browser through which they can select the items and place the order in a seamless way.

Wi-Fi Based Ordering

The feature allows consumers to place an order from their phones by simply connecting to the restaurant's Wi-Fi at the property. Such Wi-Fi ordering makes the process much faster and secure as it is hosted on the restaurants network without any dependency on the customer's mobile network. This feature can also work in offline mode in case of slower internet speed at the restaurant.

Industry-First Digital Postpaid Dining

In a dine-in environment, customers often repeat orders or make new ones for different courses. With the postpaid dining feature, guests can easily do that without the hassle of paying upfront every time a new order is placed. Once the repeat order is placed, the waiter will approach the table maintaining the prescribed social distance to confirm the order. On confirmation, the waiter shoots the order to KDS (Kitchen Display System) where the chef will receive a notification to start the preparation process. The guest can continue to reorder without any interruption just like they have been doing in the pre-COVID world.

Digital Bill & Payments

Bill settlement can be done without physically touching any bill book or receipt. Once the guest is through with the meal, they can request the bill directly from their mobile. The waiter assigned to the table will receive the notification and raise the bill. The same will appear on the customer's phone along with the payment gateway for online payment or cash option. On making the payment, the receipt is automatically generated on the phone and a digital copy will be sent to the customer on WhatsApp and via SMS.

No Additional Burden On Restaurants

In these difficult times, the last thing restaurants want is to take any hit to their revenues in the name of digital ordering or payment assistance. As a technology enabler, POSist will be available to restaurants without any additional burden on transaction charges. POSist will offer an open platform for restaurateurs to choose the payment processor and the fee they negotiate with them.

POSist can be used by restaurants of all formats and sizes including, Fine-Dine Restaurants, Casual Dining Restaurants, QSRs, Hotel Restaurants, Food Courts, Bar & Breweries, and Cloud or Dark Kitchens. The company works with some of the leading brands across the world including Taco Bell, Jamie's Italian, UK based Millie's Cookies, Olive Bar & Kitchen among others.

POSist is integrated with all the leading payment gateways such as Paytm, MobiKwik, PayU, PhonePe, EzeTap, CCAvenue, and VeriPay. The POS software also works with Amazon Pay, Paytm, and DotPe to facilitate digital ordering through their QR code reader.

Ola Suspends Food Delivery Biz of Foodpanda, Lay-off Employees

Ola has suspended food delivery business of Foodpanda, which the cab aggregator acquired in 2017, reported LiveMint. Ola has even laid off about 40 mid- to entry-level employees and terminated the contracts of most of its 1,500 food delivery executives, said the report citing four people aware of the development and confirming the report.

For last couple of months, Ola is reportedly struggling to keep the Foodpanda business afloat as the established specialty players such as Swiggy, Zomato and Ubereats have already acquired a major portion of the market.

According to the report, Ola wants to shift its focus from food delivery from restaurants to its own brands and in-house cloud kitchen business, which it launched after Foodpanda acquired Holachef, a Mumbai-based food-tech startup, in October last year.

Ola has launched a few brands and is considering the launch of a few more. Under its cloud kitchen business, Foodpanda currently owns three private label brands - The Great Khichdi Experiment, Lovemade and FLRT.

The report quoted one of its sources, "They (Ola) have realized they can’t burn money like Swiggy and Zomato, which is why they only want to do in-house brands. Over the last few months, Foodpanda has been scaling down its marketplace."

Following the suspension of Foodpanda, Ola is now in talks with delivery firms such as Dunzo and Zomato to re-list its cloud kitchen brands. It wants to focus only on running the cloud kitchen brands instead of a food delivery business, the report said.

In the last two weeks alone, Ola has dissolved the ground team of Foodpanda completely. While Ola has retained its core operations team having senior employees, the entry-level employees were given pink-slips which then was followed by lay-off of on-ground operations team. Notably, it was Ola founder and CEO Bhavish Aggarwal who supervised the staffing of executives at Foodpanda post its acquisition.

In 2015, Ola had tried its hands on food delivery business with Ola Cafe, where customers could order through the app and Ola cabs would deliver the order in quick time. However, within a year later the company had to shut down the service on account of stiff competition from Swiggy and Zomato.

In the same year, Ola also tried to diversify its business by adding online grocery delivery service to its offerings by launching 'Ola Store' in July 2015

Last year in May, it was reported that Ola's parent ANI Technologies Pvt. Ltd was setting up a holding company that will own different business units, including its core cab business, food delivery app Foodpanda and the nascent businesses of electric vehicles (EV) and the international unit.

Cloud Kitchens Startup Box8 Raises $15 Mn from eWTP Ecosystem Fund, Others

Box8, one of India’s largest cloud kitchen startups has raised $15 million led by eWTP Ecosystem Fund. Existing investors Mayfield and IIFL Seed Ventures fund have also participated in this round.

Started by two IIT graduates Amit Raj and Anshul Gupta, Box8 is a technology first, full stack cloud kitchen company that is known for its All-in-1 meals, Desi Boxes & more. They own the entire value chain, from procurement of high-quality ingredients to food preparation to the last mile delivery, hence ensuring superior customer experience every time.

Box8 has a presence in 4 cities: Mumbai, Bangalore, Pune and NCR delivering over 1 million meals every month from the company-owned 110+ cloud kitchens. Its network of cloud kitchens negates the high rental & operations costs incurred by traditional restaurants and has workflows better suited for delivery.

Box8’s parent company, Poncho Hospitality Pvt. Ltd. also owns and operates the pizza delivery brand- MOJO Pizza. In less than 18 months since its inception, MOJO Pizza has grown to be the largest home-grown Pizza delivery chain delivering over 3 lakh pizzas a month. It leverages the existing delivery fleet, technology platform and the network of 110+ cloud kitchens across 4 cities.

eWTP Ecosystem Fund is headed by Mr. Youngfu Yu, a founding member of the popular Chinese web browser company UCWeb. He later became a key leader in the Alibaba ecosystem: heading multiple businesses, including Autonavi, Alimama, and Alibaba Entertainment Group.

“We are solving the biggest unsolved problem in food delivery, which is the preparation of food itself. Traditional restaurants simply have a different DNA: their food is all about experience and is meant to be eaten immediately. We are a delivery first company, designing our food keeping in mind that it will be in transit for another 10-15 minutes. Our in-house fleet delivers 100% of our orders, this gives us even greater control over the food quality,” says co-founder, Amit Raj.

“Restaurants are still lagging in technology adoption. Even the biggest brands run on archaic systems with human dependent inventions. We have built our proprietary technology platform grounds up, which forms the backbone of our seamless operations. After all, we are solving two big problems: on-demand preparation of high-quality food and delivering it piping hot within 25 mins. To keep doing this at scale, we would double down on tech,” says co-founder, Anshul Gupta.

With this additional funding, they plan to rapidly scale the business geographically to 5 more cities with 100 more kitchens in the next 12 months. They are planning to aggressively acquire talent & invest deeper in technology.

Restaurants, Food Tech Cos and The Cloud Kitchen in India

In the business world, one needs to keep reinventing themselves in order to remain relevant and maintain their position in the market. A similar thing is happening currently in the India's online food delivery space. Two of the most famous names in the Indian Online Delivery space, Zomato and Swiggy have now taken the "cloud kitchen" route to capture interest of the foodie population of the country. Since the concept takes the risk out of trying new places, the concept has a potential of gaining huge success in India's self-confessed foodie population.

What is Cloud Kitchen?

what_is_cloud_kitchen

In simple words, a Cloud Kitchen is a delivery-only kitchen, which can be easily set up without too much infrastructure or operational costs. The concept allows for a greater variety of food being available to the customers for delivery.

The reason that the concept of Cloud Kitchen is gaining such popularity is because they do not have any facility other than providing food, hence their entire focus remains on their food preparation and its quality. They just function as a production unit with a space for the preparation of food. Since the food can be ordered online, hence, the considered got its name cloud kitchen.

Why Cloud Kitchen?

The cutthroat competition prevalent in the restaurant industry, along with the decreasing margins has resulted in shutting down of a number of restaurants as they are unable to cover their costs and sustain. Over the last couple of years, it has also been observed that the fast-paced lives that human being live nowadays has resulted in a drastic decrease in the number of dine-in customers. At the same time, the numbers
of home delivery orders have increased significantly.

The swelling of the number of delivery orders has led to various offline restaurants ditching their traditional setup and moving towards cloud kitchen operations.

Cloud kitchen restaurants work towards maximising their number of orders per day, by focusing solely on mass production of food and decreasing the overall production and packaging time. Many of the restaurants are now seriously considering to automate some of the preliminary aspects of food production in order to save them some precious time.

The Bowl Company By Swiggy

It was in late 2015 that Bengaluru-based food delivery startup Swiggy announced that it will be opening kitchens in areas where its partner restaurants lack a physical presence but are most likely to have a high numbers of customers.

It was finally in January, 2017 that the Online food aggregator launched its cloud kitchen called 'The Bowl Company' in select areas in Bengaluru.

As of now, it is offering a limited menu in Bengaluru's Koramangala from its cloud kitchen model. For this, it has joined hands with some of the popular restaurants in a joint venture to offer a selection where the restaurant does not have a physical presence.

According to Swiggy, with cloud kitchens they aim to extend the food tech and delivery continuum by creating a platform where multiple brands can work from a single kitchen (external or Swiggy) to meet consumer demands in certain pockets of the city. The company is looking forward to scaling up the pilot programme in due course.

Zomato Infrastructure Services (ZIS)

ZIS is basically a kitchen infrastructure service where the Gurugram-based online restaurant discovery and food ordering company will be working with its current restaurant business owners to expand their business to more locations without incurring any fixed cost.

The infrastructure services are basically delivery only food courts in locations slightly off the premium locations. These locations are selected based on Zomato data. According to Zomato, a majority of these locations are densely populated mid-income areas in large cities, and second tier cities in India.

ZIS will allow users to select dishes from multiple brands to build a single food order. For example, how about a samosa with burger? Sounds delicious interesting, right?

The pilot kitchen is in Dwarka will start cooking in the first/second week of March. After this, Zomato doesn't plan to have another location for another 2-3 months. But once it has learnt the business model’s nuances, and reasonably knows how to bypass Murphy’s law, they will expand to 5 locations very soon.

Swiggy v/s Zomato

swiggy_zomato

Zomato has made it clear that it will not be cooking food by itself in these kitchens unlike Swiggy because they want to help their customers (restaurateurs) and not compete with them. Zomato will be providing the necessary infrastructure to restaurants to make it easy for its customers to set up a delivery business.

While ZIS will provide the real estate, build the kitchen and supply all the equipment for its customers to just ‘walk in’ and start their business in matter of a few hours. The Bowl Company, on the other hand, is a joint venture by Swiggy with popular restaurants to offer a selection where the restaurant does not have a physical presence. The Swiggy platform facilitates lead generation, payment and delivery of orders for its partner restaurants.
